6 ounces pitted cherries, thawed if frozen
2 medium-sized avocados, pitted and peeled
1/2 cup honey
1/2 cup strong brewed decaf coffee
dollop of coconut cream, more if needed
1/4 cup unsweetened cocoa powder
1 teaspoon pure vanilla extract
2 ounces melted dark chocolate
1. In a blender, place cherries, avocados, honey, coffee, cream, cocoa powder, vanilla, and melted chocolate.
2. Cover and blend for about 1 minute or until the mixture begins to move smoothly through the blender.
3. Stop and scrape down sides of the blender and add a bit more cream as necessary to keep the mixture moving.
4. Blend on high speed until as smooth and uniform as possible. The mixture will be thick but soft.
5. Divide the mixture evenly among 6 to 8 popsicle molds, depending upon size. Freeze for at least 6 hours.
